    Chicken Mayo Sandwich recipe made with shredded chicken, mayonnaise, bread, and garlic. This easy chicken sandwich is lightly spiced up with salt, pepper, and red pepper flakes.

    Chicken sandwich with Mayonnaise is a quick and easy chicken recipe for breakfast or snacks. You can make it quickly within 10 minutes.

    You can either grill this chicken sandwich or serve it as a cold chicken sandwich. If you are looking for a quick breakfast sandwich recipe that is filling too, then this chicken sandwich is the right choice.  

    This mayo chicken sandwich is a great way to use leftover shredded chicken or grilled chicken. Just shred them and combine them with other sandwich ingredients. A quick chicken sandwich is ready within 10 minutes.

    This creamy chicken sandwich is surely going to be your kid’s favorite. You can serve them as breakfast, snacks or pack them up for the kid’s lunch box.

    • Meal prep - You can cook the chicken in advance. Store it in an airtight container in the refrigerator. Or for a longer shelf life freeze it.

    Chicken Mayo Sandwich Ingredients

    • Chicken - I have used boneless chicken breast. You can also use chicken thighs.
    • Mayonnaise - I have used veg mayonnaise in this recipe. You can also use garlic mayonnaise or egg mayonnaise.
    • Garlic - I have used fresh minced garlic. You can also use garlic powder or skip it.
    • Flavoring - Pepper powder, salt, and red chili flakes. Red chili flakes are completely optional.
    • Cilantro - Cilantro is an optional ingredient. To substitute, you can add basil leaves, chopped chives, or dill leaves.
    • Green chutney - This is completely an optional ingredient. However, I love to add it to my chicken sandwich. It gives a lift to all the flavors and it tastes amazing. The recipe to make green chutney is given in the recipe card notes.
    • Butter - Adds a beautiful flavor to the sandwich.
    • Bread or Bun - You can use either white bread or brown bread or a bun for making the sandwich.

    How to make Chicken Mayo Sandwich

    Preparation

    1. Shred the Chicken - Boil water in a pan over medium-high heat. Add a bay leaf, black peppercorns, salt, and stir.
    2. Next, add the chicken.
    3. Cover with a lid. Cook it for 15 minutes or until the chicken is cooked.
    4. Remove the chicken to a plate. Let it cool down a little bit.
    5. With the help of a fork shred the chicken.

    Making chicken sandwich

    1. Combine shredded chicken, mayonnaise, garlic, pepper powder, salt, red chili flakes, and cilantro in a mixing bowl. Taste and add salt or pepper if required. Chicken mayo sandwich filling is ready.
    2. Take a slice of the bread.
    3. Spread the chicken mayo filling over it.
    4. To another slice of bread, apply the green chutney (optional).
    5. Cover the sandwich. You can serve it as a cold chicken sandwich.
    6. Or grill it. Apply butter on the outer surface of the sandwich.
    7. Heat a griddle or a grill pan over low heat.
    8. Place the butter side of the sandwich facing the pan. Toast the sandwich.
    9. Apply butter on the other side. Toast it.
    10. The chicken mayo sandwich is ready. Slice it and enjoy.

    Recipe Tips & Notes

    • You can serve this sandwich as a cold chicken sandwich or grill it.
    • The addition of green chutney is completely optional. Green chutney enhances the flavor of the sandwich.
    • Toasting the sandwich adds a little crunch and tastes good.
    • Toast the sandwich on low heat. It prevents the mayonnaise from being runny.
    • While making the sandwich filling the quantity of mayonnaise should be just enough to bind the sandwich filling.
    • Do not increase the quantity of mayonnaise. Otherwise, the sandwich will become soggy.
    • Be careful while adding salt to the recipe. Mayonnaise has salt in it.
    • For meal prep - You can cook the chicken in advance. Let it cool down completely. Shred the chicken. Store it in an airtight container in the freezer. Stays good for a month.

    Serving Suggestions

    • You can serve it on bread (white bread, brown bread, or multi-grain bread) or bun.
    • Consume this sandwich within 2 hours of preparing it.

    Storage Suggestions

    • Chicken Mayo sandwich filling is not a freezer-friendly dish so avoid storing it. Mayonnaise will become runny once you thaw it.
    • You can cook the chicken in advance. Let it cool down completely. Store it in an airtight container in the freezer. Stays good for a month.
    • Do not store the leftover chicken sandwich in the refrigerator. We have added salt to it. It will become runny after some time.

    Variations that you can try

    You can add some celery, chopped onions, or red bell pepper to the sandwich filling. It will add some crunch to the sandwich.

    • You can use grilled tofu or paneer for a vegetarian version of this sandwich.
    • Add some chopped chives, or dill leaves instead of cilantro.
    • Shred the grilled chicken and add it to the sandwich. It tastes amazing.

    • 3 tablespoon mayonnaise

    Other Ingredients:

    • 4 bread slice

    • Ingredients for making Green Chutney: - Coriander leaves - 1 cup, Mint leaves - ½ cup, Roasted chickpeas (putana) - ¼ cup, Green chilies (roasted) - 3 (add as per taste), Chaat masala - 1 tsp, Lemon juice - 2 tbsp, Cumin powder - ½ tsp, Salt to taste
    • To make green chutney - Grind the ingredients to a fine paste. Green chutney is ready. Store it in an airtight container in the freezer. It stays good for 2 months.
