Chicken Mayo Sandwich recipe made with shredded chicken, mayonnaise, bread, and garlic. This chicken sandwich is lightly spiced up with salt, pepper, and red pepper flakes.
Shred the Chicken - Boil water in a pan over medium high heat. Add a bay leaf, black peppercorns, salt and stir.
Next, add the chicken.
Cover with a lid. Cook it for 15 minutes or until the chicken is cooked.
Remove the chicken to a plate. Let it cool down little bit.
With the help of a fork shred the chicken.
Making chicken sandwich:
Combine shredded chicken, mayonnaise, garlic, pepper powder, salt, red chili flakes, and cilantro in a mixing bowl. Taste and add salt or pepper if required. Chicken mayo sandwich filling is ready.
Take a slice of the bread. Spread the chicken mayo filling over it.
To another slice of bread, apply the green chutney (optional).
Cover the sandwich. You can serve it as a cold sandwich.
Or grill it. Apply butter on the outer surface.
Heat a griddle or a grill pan over low heat.
Place the butter side of the sandwich facing the pan. Toast the sandwich.
Apply butter on the other side. Toast it.
Chicken mayo sandwich is ready. Slice it and enjoy.

The addition of green chutney is completely optional. Green chutney enhances the flavor of the sandwich.
Toasting the sandwich adds a little crunch and tastes good.
Toast the sandwich on low heat. It prevents the mayonnaise from being runny.
While making the sandwich filling the quantity of mayonnaise should be just enough to bind the sandwich filling.
Do not increase the quantity of mayonnaise. Otherwise, the sandwich will become soggy.
Be careful while adding salt to the recipe. Mayonnaise has salt in it.
For meal prep - You can cook the chicken in advance. Let it cool down completely. Shred the chicken. Store it in an airtight container in the freezer. Stays good for a month.
Ingredients for making Green Chutney: - Coriander leaves - 1 cup, Mint leaves - ½ cup, Roasted chickpeas (putana) - ¼ cup, Green chilies (roasted) - 3 (add as per taste), Chaat masala - 1 tsp, Lemon juice - 2 tbsp, Cumin powder - ½ tsp, Salt to taste
To make green chutney - Grind the ingredients to a fine paste. Green chutney is ready. Store it in an airtight container in the freezer. It stays good for 2 months.
