How to make it

Step 1 Make Grilled Chicken
- Pound the chicken breasts for even thickness. Keep it aside.
- To marinate the chicken - Combine all the ingredients mentioned under Mediterranean chicken marinade in a mixing bowl. Combine the chicken with marinade. Marinate for 30 minutes.
- To cook the chicken - Heat 2 tablespoon oil over medium heat. Hold the chicken breast with tongs and shake off the excess marinade in the marinade bowl. Place the marinated chicken on the heated skillet or a grill pan.
- Cook the chicken breast for 4-5 minutes on each side or until the chicken is cooked. Remove and keep it on a plate. Let it rest for 10 minutes. Slice the chicken. Cover and keep it aside.
Step 2 Prepare Hummus
- In a mixer or grinder jar, add tahini, olive oil, lemon juice, cooked chickpeas, cumin, garlic, and salt. Grind it. It will be of thick consistency.
- Add 2-3 tablespoon water and grind it to a fine paste (spreadable consistency). Taste and adjust salt and lemon juice as per taste. Remove it to a bowl. Hummus is ready. Keep it aside.
Step 3 Make Salad
- In a mixing bowl, whisk olive oil, lemon juice, a pinch of salt, pepper, and parsley to combine.
- Add the tomatoes, cucumber, red onions, and crumbled feta cheese. Toss it to coat with the dressing. Taste and adjust the seasoning. The salad is ready.
- A small tip - Feta cheese is salty so toss the salad ingredients first and then add salt as per taste.

- Warm tortilla or flatbread. Spread hummus in the center. Do not spread it on the sides as it will be difficult to fold.

- ¼ cup Greek Yogurt (Any thick yogurt or curd)
- 1 teaspoon finely chopped or minced garlic
- 2 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon paprika (skip if you do not like spicy)
- ½ teaspoon ground black pepper
- salt to taste
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
For Hummus
- ¼ cup tahini (substitute - lightly roasted sesame seeds 3 tbsp)
- 2 tablespoon olive oil
- 2 tablespoon lemon juice
- 1 cup cooked chickpeas rinsed and drained
- ½ teaspoon ground cumin
- 1 clove garlic roughly chopped
- salt to taste
For Mediterranean Salad
- 3 tablespoon olive oil
- 3 tablespoon lemon juice
- salt to taste
- ½ teaspoon ground black pepper
- 3 tablespoon finely chopped parsley basil or dill leaves
- 1 teaspoon finely chopped or minced garlic
- ½ cup tomatoes (plum or cherry tomatoes)
- 1 cucumber deseeded & chopped
- ½ red onions diced
- ¼ cup feta cheese (or any cheese of your choice)

- 6 Tortillas or Flatbread (big size or large)
- Lettuce leaves optional

- Chicken - You can use pre-cooked chicken. I have used boneless skinless chicken breasts to prepare Mediterranean chicken. You can also use boneless chicken thighs. For a quick meal, you can use any cooked chicken or rotisserie chicken.
- Yogurt - I have used Greek yogurt to marinate the chicken. You can substitute it with any other full-fat yogurt or curd.
- Mediterranean flavors - Garlic, coriander, cumin, oregano, pepper, salt and lemon juice.
- Oil - I have used olive oil. Substitute it with any neutral flavor oil like canola oil, sunflower oil, etc.
- Paprika - I have used paprika to spice up the chicken. This is completely optional. If you do not like spicy flavors skip adding it.
- Hummus - You can use store-bought or homemade. I used homemade hummus. To make hummus, I have used cooked chickpeas. Do not skip the hummus spread. It tastes amazing.
- Salad -For salad, I have used ripe plum tomatoes, cucumber, and red onions. You can use any fresh vegetables of your choice.
- Feta Cheese - I have used Feta cheese for authentic Mediterranean flavors. Substitute it with any of your favorite cheese or skip if you do not have one.
- Herbs - I have used parsley. Substitute it with basil or dill leaves.
- Tortillas or Flatbread - Go for a big-size (large) tortilla or flatbread. They hold the filling perfectly and are easy to wrap. You can use any tortilla like whole wheat tortilla or gluten-free.
How to store?
- Do not try to store the leftover wraps. It will be soggy after some time. You can store them for 2-4 hours. Wrap it in a foil.
- You can store the excess filling that you did not use to make the wrap. Store the leftover chicken within 2 hours of preparing it. Keep it in an airtight container and refrigerate. Stays good for 5 days.
- Same way, you can store the salad in another airtight container. But the veggies will release water and turn soggy. Not good for making the wraps again. I recommend making a fresh salad for the wraps.
Mediterranean Chicken Wrap Variations
- For a creamy Mediterranean chicken wrap, add tzatziki. Don’t have time to make tzatziki, add only Greek yogurt. A full-fat Greek yogurt alone adds enough creaminess to these chicken wraps.
- Add Kalamata olives to the wrap for classic Mediterranean flavors.
