Homemade Chipotle Mayo
This grilled chipotle chicken sandwich features homemade chipotle mayo. All you need is mayonnaise, canned chipotle peppers (don't forget the adobo sauce, for it's essential to get the greatest flavors), a squeeze of lime for brightness, and some garlic. Blend everything to make quick chipotle mayo. It goes great with fries, tacos, burgers, and whatever else you can think of. Here’s how to make it.

- Chicken Breast: Boneless, skinless chicken thighs can be used instead. They tend to be juicier than chicken breasts.
- Chipotle Pepper in Adobo Sauce: This is the key ingredient for the smoky chipotle flavor of this chicken sandwich. You can substitute it with 1 teaspoon of chipotle powder. While it won't have the same smoky depth, it will still provide some chipotle heat. or 1 tablespoon chopped canned chipotle peppers - This offers a spicier alternative so adjust the amount based on your heat preference, or 2 teaspoon chipotle seasoning.
- Oregano, Cumin, Onion Powder, Garlic Powder: These spices add depth and complexity to the marinade. You can substitute onion & garlic powder with fresh onion & garlic.
- Oil: Any neutral oil like olive oil, avocado oil, or canola oil will work.
- Yogurt & Mayonnaise: The addition of yogurt makes it a bit nutritious. To substitute, use all Mayonnaise (½ cup) for a richer flavor or sour cream for a tangier flavor.
- Bread - Any type of bread you prefer will work, like Telera bread, sourdough bread, sliced bread, or brioche buns.
- Lettuce: Any variety of lettuce you like, such as romaine, iceberg, or butter lettuce.
- Cheese: I used processed cheese slices but any cheese you enjoy like cheddar, pepper jack, Monterey Jack, or mozzarella would work.
- Tomato Slices: Feel free to add other vegetables like sliced onion, avocado, or roasted peppers.
How to make Chipotle Chicken Sandwich
- For the Marinade: Combine all marinade ingredients in a blender until smooth. Coat the chicken breasts evenly with the marinade, then cover and refrigerate for 30 minutes to 2 hours.
- For Chipotle Mayo: Combine the ingredients mentioned under chipotle mayo and blend it.
- Toast Bread: Heat a pan over medium heat. Apply butter on the bun and toast until it is crisp and lightly golden.
- Cook Chicken: In the same pan, add 2 teaspoon oil and cook chicken until it's charred and cooked through. Place cheese slices over the cooked chicken (optional). Keep it aside.
- Assemble the Sandwich - Apply chipotle mayo on the bottom bun, and top it with lettuce leaves, chicken, and tomato slices. Season the tomato slices with salt & pepper. Spread additional chipotle mayo on the top bun and place it on the sandwich.

For Meal Prep
- You can cook a larger batch of chicken and use it throughout the week. Cook chicken in advance. Let it come to room temperature. Store it in an airtight container. Stays good for 2-3 days in the refrigerator or freeze it for a month.

- ½ teaspoon cumin

- ½ teaspoon onion Powder
- ½ teaspoon garlic Powder
- 1 tablespoon oil
For Chipotle Mayo
- ¼ cup greek yogurt
- ¼ cup mayo
- salt to taste
- ¼ teaspoon garlic powder
- 1 teaspoon lemon juice
- ½ teaspoon honey
- 1 teaspoon adobo sauce
Other Ingredients
- 2 chicken breast skinless and boneless
- 2 burger bun
- 2 lettuce Leaves
- 2 cheese
- 4 tomato slices
- salt & pepper
Instructions
- For the Marinade: Combine all marinade ingredients in a blender until smooth. Coat the chicken breasts evenly with the marinade, then cover and refrigerate for 30 minutes to 2 hours.
- For Chipotle Mayo: Combine the ingredients mentioned under chipotle mayo and blend it.
- Toast Bread: Heat a pan over medium heat. Apply butter or bun and toast it until crisp and light golden.
- Cook Chicken: In the same pan, add 2 teaspoon oil and cook chicken until charred and cooked through. Place cheese slices over the cooked chicken (optional). Keep it aside.
- Assemble the Sandwich - Apply chipotle mayo on the bottom bun, top it with lettuce leaves, chicken, tomato slices. Season tomato with salt & pepper. Spread additional chipotle mayo on the top bun and place it on the sandwich.

- Marinate the Chicken for maximum flavor, marinate your chicken breasts or thighs for 2 hours in the refrigerator. It makes a huge difference in flavors. But if you are busy marinate it for a minimum of 30 minutes.
- Cooking Chicken - You can grill, pan-fry, or bake your chicken. Grilling offers a smoky flavor similar to Chipotle's, while pan-frying is quicker.
- Toast the bread for a nice textural contrast.
- Customize your homemade sandwich - Add other toppings you enjoy, like sliced avocado, crispy bacon, or pickled jalapenos.

- For the Marinade: In a blender jar combine

- ½ tsp cumin
- ½ tsp salt add more as per taste
- ½ tsp pepper

3) Coat the chicken breasts evenly with the marinade, then cover and refrigerate for a minimum of 30 minutes to 2 hours for maximum flavors.
4) For Chipotle Mayo: While the chicken is marinating let's make the homemade chipotle Mayo. In a blender jar, add:
- ¼ cup Greek yogurt
- ¼ cup mayo
- salt to taste
- ¼ tsp garlic powder
- 1 tsp lemon juice
- ½ tsp honey
- 1 tsp adobo sauce
Blend it.
5) Toast Bread: Heat a pan over medium heat. Apply butter on the bun.
Place the butter side facing the pan and toast until it's crisp and lightly golden.
6) Cook Chicken: In the same pan, add 2 teaspoon of oil and cook the chicken until it's charred and cooked through.
Place cheese slices over the cooked chicken (optional). Keep it aside. The cheese will melt with the carryover heat.
Assembling the Sandwich: Apply chipotle mayo on the bottom bun.
Top it with lettuce leaves, chicken, and tomato slices. Season the tomato with salt & pepper.
Spread additional chipotle mayo on the top bun and place it on the sandwich.
