    Doll cake recipe with step-by-step photos and video recipe. Making a doll cake, for your princess, on her special day is easy. My daughter requested me to make a Barbie doll cake for her birthday. After the completion, the cake looks so beautiful that it will surely bring a smile to your princess' face.

    About this Doll cake recipe without mold

    This Doll cake recipe includes in detail, how to make a doll cake without mold. I tried to make it easy for someone who hasn't tried the recipe yet.

    If you do some pre-planning then it will be easy for you to make. You can make the sponge cake a day in advance and the next day decorate the cake. It took almost 2 hours for me to assemble and decorate the cake.

    Ingredients

    For Sponge Cake:

    • 1 cup all purpose flour/Maida -
    • ¾ cup curd - (¾ cup + 1 tbsp) Use Curd at room temperature
    • ¾ cup sugar
    • ½ teaspoon baking powder
    • 1 teaspoon baking soda
    • ¼ cup cooking oil
    • 1 teaspoon vanilla essence

    For Sugar Syrup:

    • 2 tablespoon sugar
    • ¼ cup water
    • 1 teaspoon vanilla essence

    For the Icing:

    • 700 ml non-dairy whipping cream
    • 1 teaspoon vanilla essence

    Other ingredients:

    • Edible Silver Beads for decorating the dress
    • Pink Food color.
    • Inox number 14 tip used to create ruffles.
    • 3 plastic straws

    Instructions

    Prepare a basic vanilla sponge cake

    • In my last post, I have shared the recipe for eggless vanilla sponge cake. For this doll cake, I baked 4 sponge cake. Depending on the height of the doll, decide on how much sponge cake you require to prepare for making the dress of the doll.

    Making the whipped cream icing

    • In a mixing bowl take chilled whipping cream. Whip the cream until it reaches stiff peaks.
    • The cream will be almost double in quantity. It takes around 3 to 5 minutes.
    • You can add vanilla essence now. Mix it well.

    Assembling the dress of the Doll cake

    • Cut a small circle in the middle of the sponge cake with a cookie cutter.
    • Put some icing on the cake board. Now place the first sponge cake over it.
    • Pour some sugar syrup on it. Apply some icing over it.
    • Place second sponge cake over it. Repeat the same process for the second and third sponge cake.
    • Place the fourth sponge cake and pour sugar syrup on it.

    Shaping the dress of Doll cake

    • Hold the knife at an angle of 45 degrees. Leave about one-inch space from the outer border of the circle and start cutting a circle. Start with shaping the top sponge cake only.
    • Next start shaping the dress of the Barbie Doll
    • Using a serrated knife, carve the cake to a dome shape.
    • Using a brush remove the crumbs sticking to the cake and the cake board. Crumb coat the cake.
    • Apply a layer of icing with a Palate knife all over the cake. It will seal the crumbs from falling off.
    • To hold the shape insert plastic straw. First, measure the height and cut the straw accordingly.
    • I used 3 straws here. Keep it in the refrigerator to set for around 30 minutes to an hour

    Decorating the dress of Doll cake

    • For the skirt part, I am using white and pink color.
    • For making Pink color icing -Take about 4-5 tablespoon of whipped cream in a bowl. Add Pink food color to it. Mix it. Put this icing in the Icing bag. Keep it in the refrigerator.
    • Tie up the hair of the doll. Wrap the lower part of the Barbie with a cling wrap. It will protect the doll from icing.
    • Insert the doll from the top of the cake. Apply some icing around her waist.
    • Mark the design of the dress. Pipe ruffles.
    • Take the white color icing and start creating ruffles inside the marked area.
    • Now make pink color ruffles in the remaining area of the skirt.
    • Make white dots for the bodice part of the dress.
    • Decorate the dress with edible silver pearls.
    • Barbie doll cake is ready.
    • I placed a small cupcake for the candle.

    Notes

    1. For making sugar syrup - In a pan add sugar and water. Bring it to a boil. Stir constantly. Turn off the heat. Cover with a lid and let it cool down. Once cooled add Vanilla Essence.
    2. It took one hour to bake the sponge cake for the doll cake. It is good to bake the cake a day earlier and then refrigerate it, as the cake will be firm and you can easily shape the dress of the doll.
    3. I have initially inserted skewers to hold the sponge cake in its place. Better to use plastic straws. It holds the cake properly in its place.

    Prepare a basic vanilla sponge cake

    In my last post, I have shared the recipe for eggless vanilla sponge cake. For this doll cake, I baked 4 sponge cakes. Depending on the height of the doll, decide on how much sponge cake you require to prepare for making the dress of the doll.

    You can ease the process by purchasing a mold for the doll cake. You can easily buy it online too.

    Making the whipped cream icing

    1. In a mixing bowl take whipping cream.

    A small tip: Chill the whipping cream overnight. Keep it outside the refrigerator for 30 minutes before using it. Do not defrost it completely. When you open the packet of whipping cream, it should have at least 30-40% ice crystals in them. Use it in that stage. When the whipping cream has some ice crystals, it gets whipped faster. No need to lay ice cubes in another bowl and chill the beater and bowl etc. This trick always works for me 🙂

    2. Whip the cream until it reaches stiff peaks. The cream will be almost double in quantity and will take around 3 to 5 minutes. I used sweetened whipping cream so no need to add sugar.

    3. Whipped Cream is ready now. You can see the peaks forming. This is the stage to stop. If you overbeat it,  it will turn into butter. You can add Vanilla essence now. Mix it well. It is ready to use now.

    4. Remove the cling wrap from the sponge cake.
    5. Cut a small circle in the middle of the sponge cake with a cookie cutter. This will make a place for the doll's leg to set inside easily.
    6. Put some icing on the cake board.

    7. Now place the first sponge cake over it. It will help to firmly hold the bottom of the cake on the cake board.
    8. Pour some sugar syrup on it.
    9. Apply some icing over it.

    10. Place the second sponge cake over it.
    11. Again pour some sugar syrup and apply some icing on it. Repeat the same process for the third sponge cake.
    12. Place the fourth sponge cake and pour sugar syrup.

    16. If you find it difficult, you can bake a cake in a microwave-safe glass bowl or use a mold available for making a doll cake.
    17. Using a brush remove the crumbs sticking to the cake and the cake board. Crumb Coat the Cake. Apply a layer of icing with a Palate knife. It will seal the crumbs from falling off.

    19. Keep the cake in the refrigerator to set for an hour.

    • To making Pink color icing -Take about 4-5 tablespoon of whipped cream in a bowl. Add pink food color to it. Mix it. Put this icing in the icing bag. Keep it in the refrigerator.

    22. Wrap the lower part of the Barbie with a cling wrap. It will protect the doll from icing.
    23. Insert the doll from the top of the cake. Apply some icing around her waist.

    24. Using a skewer mark the design of the dress.
    25. Take the white color icing and start creating ruffles inside the marked area. You have to pipe it in up and down motion to create the ruffles. If you are doing it for the first time, you can practice the same on butter paper first. It is easy for any beginner. Complete it to the top of the cake.

    26. Once you are finished making white color ruffles.
    27. Start working on pink color ruffles. Now make pink color ruffles in the remaining area of the skirt. You can use any color of your choice. Make white dots for the bodice part of the dress. Complete the whole bodice part in the same way. The bodice part is ready now.

    28. Decorate the dress with silver pearls. These are edible silver pearls. The Barbie doll cake is ready.

    29. I placed a small cupcake for the candle.

    Recipe Tips

    1. Bake the sponge cake the previous day. It will cut down the timings of preparing the cake. Also, you will not find too much work involved in making this doll cake.
    2. If the sponge cake is made a day in advance, then let it cool down completely. Then, wrap it in cling wrap and refrigerate it. The sponge cake will be firm the next day and it will be easier to shape the dress of the doll with it.
    3. Crumb coats the cake, after shaping the dress of the doll. Refrigerate it.
    4. You can use your own creativity and design the dress of the Barbie doll cake as you like. In addition, you can use different colors and different decorations for the doll's dress.
    5. While baking the cake I used the same batter and baked a cupcake to hold the candle. The cupcake got baked in 15 minutes.
