In this recipe post, I am sharing how to make Mediterranean chicken kebabs. These grilled chicken skewers have all the delectable flavors of Mediterranean cuisine.
The chicken is marinated in a light Mediterranean chicken kabob marinade made with oregano, thyme, olive oil, garlic, and lemon juice. Thread the chicken and veggies alternately onto a skewer, and grill the chicken kabobs until golden.
These chicken and vegetable skewers are easy to make and are loaded with fresh Mediterranean flavors. You can make it quickly within 30 minutes.
Kebabs are my favorite thing to grill during the summer. Chicken kebabs are equally enjoyed by kids and adults in our family.

- Chicken – I have used boneless skinless chicken breasts for this chicken kebab recipe. You can also use boneless skinless chicken thighs to make these Mediterranean kebabs.
- Vegetables – Bell peppers and onion. I have used green and red bell peppers. You can use any color of bell peppers or any other vegetable like zucchini.
- Olive oil – Olive oil is an important ingredient in traditional Mediterranean cuisine. You can substitute it with any neutral flavor oil like sunflower oil or vegetable oil.
- Fresh Garlic – Fresh garlic is the best. You can substitute it with garlic powder.
- Herbs – Oregano and Thyme. You can substitute it with Italian seasoning. Or simply add oregano.
- Paprika – I like to add a little spicy kick to the kebabs. However, you can skip it, if you do not prefer spicy.
- Salt and Black Pepper.
- Cumin – Skip if you do not have it.

Tips to make the Best Mediterranean Kebab
- Marinating the chicken – It will help to keep the chicken moist during grilling. Also, it helps to enhance the flavor. Marinate the chicken for 2 hours. Keep it covered in the refrigerator.
- Soak the wooden skewers in water for 30 minutes. It prevents the wooden sticks from burning while cooking.
- Grill the chicken skewers in a medium-hot pan. When we place the chicken skewers on a medium-hot pan, it will seal the surface of the chicken and lock the juices inside it. Making it moist and juicy inside.

Preparations
- For Mediterranean chicken skewer marinade – In a mixing bowl, combine chicken, garlic, ground black pepper, paprika, oregano, thyme, cumin, lemon juice, olive oil, and salt. Cover and refrigerate for 2 hours.
- Cut the onion and bell peppers into cubes. Transfer it to a mixing bowl. Add salt, pepper, oregano, lemon juice, and olive oil. Combine, cover, and keep it in the refrigerator.
- Soak the wooden skewers in water for 30 minutes.
Making Mediterranean Chicken kebabs
- Thread the chicken and veggies alternately onto a skewer. Keep it aside on a plate.
- Heat a grill pan over medium-high heat. Grease the pan lightly with oil.
- Once the grill pan is hot enough, place the chicken skewers on it.
- Grill it, rotating the skewers on the pan with tongs until char marks appear on them. It will take almost 8-10 minutes to cook them. If the internal temperature of the chicken reaches 165 °F, it is ready.

Marinating the chicken for 2 hours in the Mediterranean-style marinade is enough for the best flavor and texture. Cover and keep it in the refrigerator while you are marinating the chicken.
If you are cooking it on medium heat it will take 8-10 minutes to grill. The chicken is no longer pink on the inside and the internal temperature of the chicken reaches 165 °F. Cooking time also depends on the cuts of the chicken too (Bigger cuts will take longer to cook).

Storage Suggestions
- You can store the leftover chicken kabobs in an airtight container in the refrigerator. Make sure to store it within 2 hours of cooking it. It stays good for 2 days. Reheat and serve.
- Not a freezer-friendly recipe. The veggies will become soggy once you thaw them.
