For the Marinade: Combine all marinade ingredients in a blender until smooth. Coat the chicken breasts evenly with the marinade, then cover and refrigerate for 30 minutes to 2 hours.
For Chipotle Mayo: Combine the ingredients mentioned under chipotle mayo and blend it.
Toast Bread: Heat a pan over medium heat. Apply butter or bun and toast it until crisp and light golden.
Cook Chicken: In the same pan, add 2 teaspoon oil and cook chicken until charred and cooked through. Place cheese slices over the cooked chicken (optional). Keep it aside.
