To make homemade ice cream without a machine, you have to make an ice cream base first. Ice cream base is made with whipping cream, condensed milk, and vanilla essence. Whisk it altogether and your ice cream base is ready. The recipe for Ice cream base is adapted from Gemma's homemade ice cream. I have created my own flavors from the ice cream base.

No need to churn the ice cream again and again. Just mix and keep it in an airtight container for 7 hours or overnight. Your homemade ice cream is ready. It has a soft & creamy texture and is better than any store-bought ice cream.

Making the ice cream base:
- In a mixing bowl, take whipping cream. It is better if it has some ice granules in it. It will whip faster. Whip it until it is double in size and forms soft peaks.
- Add condensed milk and vanilla essence. Again whip it until stiff peaks forms.
- Ice cream base is ready. You can make any flavors from it.
- If you want to make a plain vanilla ice cream just freeze it for 7 hours and your homemade vanilla ice cream is ready.
For making Dates & Nuts Ice cream
- Cook 15 dates in ¼ cup water until soft. Once cooled grind it to a fine paste. Keep it aside.
- Roast ¼ cup of chopped dry fruits (almonds & cashew) on a low flame until it turns aromatic. Let it cool down completely.
- Mix the prepared dates paste with 2 cups of ice cream base.
- Add the roasted dry fruits and 1 tablespoon of chopped dates.
- Tap it gently. Keep it in an airtight container and freeze for at least 7 hours.
- To serve drizzle some honey on the top and sprinkle chopped homemade dates and nuts over it.
For making Strawberry & Chocolate Ice cream
- Heat ¼ cup of water in a pan.
- Add 6-7 chopped strawberries and 2 tablespoon sugar and cook for 3-4 minutes.
- Once cooled add this mixture to 2 Cups of Ice cream base and mix. Mix it gently so that you can see swirls of red and white color in your ice cream.
- Next, add in 3 tablespoon grated chocolate and mix.
- Tap it gently. Keep it in an airtight container and freeze for at least 7 hours. Easy homemade strawberry & chocolate ice cream is ready.
For making Black Forest Ice cream
- Cook ¼ cup of cherries in ¼ cup of water until soft. Let it cool down completely.
- Take 2 Cups of Ice cream base in a container and add ¼ cup of crumbled chocolate sponge cake, cooked cherries, and 2 tablespoon grated chocolate. Mix it.
- Tap it gently. Keep it in an airtight container and freeze for at least 7 hours.
- To serve it, sprinkle some grated chocolate and place a cherry on the top. Black forest ice cream is ready to serve.
For making Cookies and cream Ice cream
- Roughly crush 5-6 oreo biscuits.
- Take 2 cups of ice cream base and mix the crushed oreo biscuits.
- Add in 2 tablespoon of grated chocolate and mix.
- Tap it gently. Keep it in an airtight container and freeze for at least 7 hours.
- To serve, sprinkle some grated chocolate and place an Oreo biscuit.
Chickoo & chocolate Ice cream
- Add pureed Chickoo (3-4 Chickoo) to 2 cups of Ice cream base and mix.
- Then add in some grated chocolate and mix.
- Tap it gently. Keep it in an airtight container and freeze for at least 7 hours.
- To serve, sprinkle some Choco chips on the top.

Notes
- Chill the ice cream base in the freezer for 7 hours and your plain vanilla ice cream is ready.
- The whipped cream and condensed milk that I used has sugar in it. So, I didn't add sugar in it. But if you want to add sugar, you can add it according to your taste.
