    These grilled Mediterranean chicken kebabs are tender, juicy, and loaded with bright Mediterranean flavors. If you marinate the chicken in advance then it takes only 10 minutes to cook these flavorful grilled chicken skewers.

    Similar to Chicken Shashlik Kebabs, these Mediterranean Kabobs are quick and easy to make at home. More Mediterranean dishes you might like are our Mediterranean chicken and rice, Mediterranean Chicken Stew, Spanish chicken and rice, and Greek lemon chicken and rice.

    Mediterranean Chicken Kabobs

    Kabobs are my favorite thing to grill during the summer. These grilled Mediterranean chicken skewers are easy to make and are loaded with fresh Mediterranean flavors. You can make it quickly within 30 minutes. Chicken Kabobs are equally enjoyed by kids and adults in our family.

    The chicken is marinated in a light Mediterranean chicken kabob marinade made with oregano, thyme, olive oil, garlic, and lemon juice. Thread the chicken and veggies alternately onto a skewer, and grill the chicken kabobs until golden.

    Ingredients and Substitutions

    • Chicken - I have used boneless skinless chicken breasts for this Mediterranean chicken Kabobs recipe. You can also use boneless skinless chicken thighs to make these Mediterranean kebabs.
    • Vegetables - Bell peppers and onion. I have used green and red bell peppers. You can use any color of bell peppers or any other vegetable like zucchini.
    • Olive oil - Olive oil is an important ingredient in traditional Mediterranean cuisine. You can substitute it with any neutral flavor oil like sunflower oil or vegetable oil.
    • Fresh Garlic - Fresh garlic is the best. You can substitute it with garlic powder.
    • Herbs - Oregano and Thyme. You can substitute it with Italian seasoning. Or simply add oregano.
    • Paprika - I like to add a little spicy kick to the Kabobs. However, you can skip it, if you do not prefer spicy.
    • Salt and Black Pepper.
    • Cumin - Skip if you do not have it.

    How to make Mediterranean Chicken Kabobs (with Stepwise Photos)

    Preparations

    • For Mediterranean chicken skewer marinade - In a mixing bowl, combine chicken, garlic, ground black pepper, paprika, oregano, thyme, cumin, lemon juice, olive oil, and salt. Cover and refrigerate for 2 hours.
    • Cut the onion and bell peppers into cubes. Transfer it to a mixing bowl. Add salt, pepper, oregano, lemon juice, and olive oil. Combine, cover, and keep it in the refrigerator.
    • Soak the wooden skewers in water for 30 minutes.

    Making Mediterranean Chicken Kabobs

    • Thread the chicken and veggies alternately onto a skewer. Keep it aside on a plate.
    • Heat a grill pan over medium-high heat. Grease the pan lightly with oil.
    • Once the grill pan is hot enough, place the chicken skewers on it.
    • Grill it, rotating the skewers on the pan with tongs until char marks appear on them. It will take almost 8-10 minutes to cook them. If the internal temperature of the chicken reaches 165 °F, it is ready.

    Tips to make the Best Mediterranean Kebab

    • Marinating the chicken - It will help to keep the chicken moist during grilling. Also, it helps to enhance the flavor. Marinate the chicken for 2 hours. Keep it covered in the refrigerator.
    • Soak the wooden skewers in water for 30 minutes. It prevents the wooden sticks from burning while cooking.
    • Grill the chicken skewers in a medium-hot pan. When we place the chicken skewers on a medium-hot pan, it will seal the surface of the chicken and lock the juices inside it. Making it moist and juicy inside.

    What goes with Mediterranean Kabob?

    You can serve it with pilaf, or cauliflower rice.
    Or serve it with salad or roasted potato wedges.

    How long should you marinate chicken?

    Marinating the chicken for 2 hours in the Mediterranean-style marinade is enough for the best flavor and texture. Cover and keep it in the refrigerator while you are marinating the chicken.

    How long does Mediterranean Kabob take to grill?

    If you are cooking it on medium heat, it will take 8-10 minutes to grill. The chicken is no longer pink on the inside, and the internal temperature of the chicken reaches 165 °F. Cooking time also depends on the cuts of the chicken too (Bigger cuts will take longer to cook).

    Storage Suggestions

    • You can store the leftover chicken kabobs in an airtight container in the refrigerator. Make sure to store it within 2 hours of cooking it. It stays good for 2 days. Reheat and serve.
    • Not a freezer-friendly recipe. The veggies will become soggy once you thaw them.

    Serving Suggestions

    • Serve the Mediterranean Kabobs with fresh tzatziki sauce or Tahini sauce.
    • With salad.
    • With chicken pilaf, or cauliflower rice as a side dish.
    • With roasted potato wedges.

    Ingredients

    Mediterranean chicken kabobs marinade

    • 2 chicken breasts (boneless & skinless)
    • 2 teaspoon garlic minced
    • 1 teaspoon ground black pepper
    • 1 teaspoon paprika
    • 1 teaspoon thyme
    • ½ teaspoon ground cumin optional
    • salt to taste
    • 1.5 teaspoon oregano
    • 3 teaspoon lemon juice
    • 4 tablespoon olive oil

    To marinate the veggies

    • ½ red bell pepper
    • ½ green bell pepper
    • 1 onion
    • salt to taste
    • ½ teaspoon ground pepper
    • ½ teaspoon oregano
    • 2 teaspoon lemon juice
    • 2 teaspoon olive oil
