About this Corn and Feta Cheese Salad
This recipe is inspired by my Fresh Corn Salsa recipe. Here, I have used Feta Cheese instead of Avocado.
Corn and Feta cheese is an amazing combination. It gives this grilled corn salad a perfect sweet and salty flavor.
Lemon juice gives it a slight tangy punch, spicy kick from the red pepper flakes, and sweetness from the honey. This corn salad is packed up with all the addictive flavors.
Serve this grilled corn salad with burgers, tacos, or sandwiches. This grilled corn salad recipe is perfect for hot summers.

Grilled Corn Salad Ingredients:
- Vegetables – I have used fresh corn, onions, tomatoes, red bell pepper, and cucumber. They add fresh flavors, crunch & beautiful colors to the salad. You can add any summer vegetables of your choice.
- Feta Cheese – I love Feta cheese. The salty flavors of Feta mingle beautifully with sweet corn. You can substitute it with any other cheese of your choice.
- Honey – The sweetness of honey balances the tangy flavor of lemon juice. To substitute it you can add sugar or maple syrup.
- Olive oil – This is the best choice for any salad dressing. Olive oil has great flavor & health benefits.
- Fresh Lemon juice – Fresh lemon juice gives a slight tangy punch to the taste buds. To substitute, you can add rice wine vinegar or fresh lime juice.
- Herbs – I have added fresh cilantro. You can substitute it with fresh basil or parsley. Or else, skip it.
- Flavoring – Add salt, freshly minced garlic, red pepper flakes & black pepper powder as per taste. You can substitute fresh garlic with garlic powder. Or skip it. If you do not prefer spicy salad, skip red pepper flakes.

- You can grill the corn in an outdoor grill. Or you can grill it on a grill pan or cast-iron skillet on the stovetop.
- You can grill the corn in advance. Once cooled, remove the corn kernels off the cob. Transfer it to an airtight container in the refrigerator. Stays good for a week.
- You can cut all the veggies for meal prep and store them in an airtight container in the refrigerator. It stays good for a week.
How to make Grilled Corn Salad
Preparations:
- Heat a grill pan or cast-iron skillet over medium heat on the stovetop. Lightly grease it with oil. Cook the corn turning occasionally for 8-10 minutes until char marks appear on them. Set it aside for 5 minutes.
- With the help of a sharp knife cut the corn kernels off the cob. Keep it aside.
Making the grilled corn salad
- Combine all the salad ingredients in a mixing bowl.
- Taste & adjust the seasoning. Add more salt, lemon juice & pepper as per taste.
- Let it rest for 30 minutes in the refrigerator. It tastes best when served chilled.
Variations that you can try:
- You can make Grilled Corn Salad with Avocado. Add Avocado instead of Feta Cheese. The other ingredients and process will be the same. Add the avocados just before serving the salad. Do not cut it in advance as it may turn brown.
- You can also boil the corn kernels instead of grilling them. Proceed with the same steps. Grilled corns are sweet with a smoky flavor. Boiled corns are sweet and juicy.

- 1/2 cup finely chopped onions
- 1/2 cup chopped plum tomatoes
- 1/2 cup chopped red bell pepper
- 1 cucumber chopped
- 1/2 cup finely chopped cilantro
- 4 tbsp lemon juice
- 3 tbsp extra-virgin olive oil
- salt to taste
- 1 tsp black pepper powder
- 1 tsp red pepper flakes
- 1 tsp minced garlic cloves
- 2 tbsp honey
- 1/2 cup feta cheese crumbled
