Maggi tastes equally great when combined with vegetables, or with eggs, or chicken. You should try this recipe to experience the same.
An egg is a good source of protein, vitamins & minerals. In addition to it adding vegetables (carrots & capsicum) add healthy elements to egg Maggi.

How to make street style Egg Maggi?
First, make Maggi with eggs using the same recipe. While serving it sprinkle some chaat masala over it & garnish with coriander leaves.
How to make Egg Maggi without vegetables?
- Beat 2 eggs & pour it in a heavy bottom pan.
- Sprinkle some black pepper powder & salt & make scrambled eggs. Keep it aside.
- In the same pan boil water. Add one pack of Maggi & Maggi masala.
- Cook for 3-4 minutes & Maggi is ready.
- Finally, add scrambled eggs to it & mix.
How to make Egg Maggi with vegetables
Preparations:
- Chop onion, ginger, garlic & capsicum. Keep it aside.
- Grate carrots & keep it aside.
- Keep all the spices & sauces ready.
Making scrambled eggs
- Heat 1 teaspoon of oil in a heavy bottom pan on low flame.
- Beat 3 eggs. Pour the beaten eggs in the pan.
- Sprinkle black pepper powder & salt on it.
- Make scrambled eggs (or egg bhurji). Keep it aside.
Making the Maggi noodles with eggs & vegetables
- In the same pan add 2 teaspoons of oil & heat it on high flame.
- Add onion, ginger & garlic. Saute until raw smell from ginger & garlic leaves.
- Next, add carrots & capsicum, sauté for 2 minutes.
- Add red chili powder, turmeric powder, salt, Maggi masala-e-magic, tomato & chili sauce. Saute for a minute.
- Add water & add Maggi masala.
- Let the water come to a boil.
- Add 2 packs of Maggi & mix.
- Cover & cook for 3-4 minutes. Maggi will absorb all the water.
- Add the scrambled eggs to Maggi & toss it well.
- Finally, add some chopped coriander leaves & mix.
- Serve egg Maggi hot & enjoy!
Cooking Tips
- Instead of adding tomatoes, add tomato sauce. It reduces the cooking time & enhances the flavor.
- Finely chop the vegetables, onion, ginger & garlic. You can use ginger & garlic paste instead of chopping ginger & garlic.
- You will not get the smell of eggs if you cook the eggs separately (i.e. making scrambled eggs) & then adding it to the Maggi.
- Adding Maggi masala e magic enhances the taste of the dish. It also hides the smell of eggs in the dish. You can purchase it from the nearby general stores, superstore or online too.
- Add chopped green chilies to make spicy Maggi egg noodles. I made it for kids so I skipped adding it.

Ingredients
To make scrambled eggs:
- 3 eggs
- ½ teaspoon black pepper powder (Kali mirch ka powder)
- salt to taste
To make maggi with eggs
- 1 teaspoon finely chopped ginger (adrak)
- 1 teaspoon finely chopped garlic (lasan)
- 1 small onion finely chopped
- ½ cup grated carrots (gajar)
- ½ cup finely chopped capsicum (shimla mirch)
- ½ teaspoon red chili powder (lal mirch powder)
- ¼ teaspoon turmeric powder (haldi powder)
- salt to taste
- 1 sachet Maggi masala e magic (or use ½ teaspoon garam masala)
- 2 teaspoon tomato & chili sauce
- 1 ¾ cups of water
- 2 packs of Maggi
- 1-2 tablespoon finely chopped coriander leaves

Notes
- To make street style anda maggi, sprinkle some chaat masala over it & garnish with coriander leaves.
- You can also add green peas, corns etc. Just boil it & add it.
- You can replace maggi masala e magic with ½ teaspoon garam masala powder (or kitchen king masala).
- Use the same recipe to make Maggi with vegetables or veg Maggi recipe. Skip adding scrambled eggs & veg Maggi is ready.
- Add chopped green chilies to make spicy Maggi egg noodles. If making it for kids then skip adding green chilies.
