    Vegetable pulao recipe with step by step pictures and video recipe. Vegetable pulao is an easy recipe to make for either lunch or dinner. This is a one-pot recipe and is wholesome food. You can serve veg pulao with raita and salad.

    What is Vegetable Pulao

    Vegetable pulao is a common rice dish made in many Indian homes. In vegetable pulao, the rice is cooked with different vegetables and spices.

    Vegetable pulao is an ideal lunch box recipe. It can be prepared within 30 minutes and is a wholesome and nutritious meal.

    Here's why this recipe works

    In this vegetable pulao recipe, I have included a small cooking tip that will help you to make perfect pulao every time.

    Whenever vegetable pulao is made in the pressure cooker, normally the pulao gets soggy and sticky.

    So, this recipe will help you to get a perfect pulao, every time you make. This is surely a no-fail recipe.

    How to make Vegetable Pulao recipe with step by step photos:

    Preparations

    1. Wash and soak basmati rice in water for 30 minutes.
    2. Chop onions, ginger, garlic, and green chilies.
    3. Chop the vegetables (carrot, beans, cabbage, and capsicum).
    4. Wash, peel, and chop the potato. Place it in a bowl filled with water.
    5. Peel the green peas.

    Making the vegetable pulao

    1. Heat oil in a pressure cooker. Once the oil is hot,  add cumin and whole spices mentioned in the ingredients list. Saute till you get a nice aroma of all the spices.Heat oil in pressure cooker and add whole spices and cumin
    2. Add 7-8 cashews, onions, and finely chopped ginger, garlic, and green chilies. Saute for  3-4 minutes till raw smell from onions, ginger, and garlic leaves.Add cashews, onion, ginger, garlic and green chilies and saute for a minute
    3. Now add all the vegetables and salt. Saute the vegetables for 4-5 minutes till raw smell leaves.Addition of vegetables and salt in the pressure cooker
    4. Next, add ½ teaspoon garam masala powder, ½ teaspoon lemon juice, and 1 ½ cup water. Let it come to a boil. Taste the gravy and add salt accordingly.Addition of garam masala and lemon juice to make veg pulao recipe
    5. Drain the water of the rice. Add 2 teaspoon oil in it and mix it well. This is the secret tip that will help you to get perfect pulao every time. The rice grains will not be sticky after pressure cooking.
    6. When the gravy starts to boil add rice. Mix the rice gently.Addition of oil in uncooked rice and then put it in the pressure cooker.
    7. Cover and cook for 1 whistle only. Switch off the flame. Let the pressure of the pressure cooker settle down on its own.
    8. Open the lid of the pressure cooker and keep it open for 5 minutes. Fluff it up with a fork.Cook for 1 whistle in the pressure cooker to make veg pulao recipe
    9. Garnish vegetable pulao with coriander leaves. Serve it with raita or salad.

    Cooking tips

    1. I have used long grain Basmati rice for making the recipe. If you use normal rice make sure you use aged rice (Purana chawal) for making veg pulao. I have made it with normal rice many times & it comes out perfect.
    2. Use the whole spices that are easily available to you. If you do not have the whole spices, then use garam masala powder in vegetable pulao recipe. Increase the quantity of garam masala powder mentioned in the ingredients i.e. ½ teaspoon to 1 tsp.
    3. After adding the cashews, immediately add onions. Cashews brown quickly in hot oil and it may burn too that's why we fry them with the onions.
    4. If you are making this vegetable pulao especially for any party then add veg maggie cubes that are available in stores. It definitely enhances the flavor of vegetable pulao. However, while making it on a daily basis, I avoid using veg cubes as it is not healthy.
    5. You can use any vegetable of your choice like you can add sweet corn, cauliflower, mushroom and paneer(cottage cheese) while making vegetable pulao recipe. Do not use vegetables that become soggy after cooking.
    6. After pressure cooking for 1 whistle, switch off the flame. Let the pressure of the pressure cooker settle down on its own. Once it settled, open the lid and keep it open for 5 minutes. After that fluff the pulao with the fork.

    • Pressure Cooker

    Ingredients

    • 1 Cup Basmati rice
    • 1 Onions
    • ¼ teaspoon Ginger
    • ½ teaspoon Garlic
    • 2 Green Chilies

    • 2 Green Cardamom
    • 1 inch Cinnamon
    • 6 Black peppercorns
    • 1 Black cardamom
    • 1 Star Anise
    • 1 blade Mace
    • 4 Cloves
