Wash and soak basmati rice in water for 30 minutes.
Chop onions, ginger, garlic, and green chilies.
Chop the vegetables (carrot, beans, cabbage, and capsicum).
Wash, peel and chop the potato. Place it in a bowl filled with water.
Peel the green peas. Set it aside.
Keep all the whole spices ready.
Making the vegetable pulao recipe
Heat oil in a pressure cooker. Once the oil is hot, add cumin and whole spices mentioned in the ingredients list. Saute until you get a nice aroma of all the spices.
Add 7-8 cashews, onions and finely chopped ginger, garlic and green chilies. Saute for 3-4 minutes till raw smell from onions, ginger and garlic leaves.
Now add all the vegetables and salt. Saute the vegetables for 4-5 minutes till raw smell leaves.
Next, add ½ teaspoon garam masala powder, ½ teaspoon lemon juice and 1 ½ cup water. Let it come to a boil. Taste the gravy and add salt accordingly.
Drain the water of the rice. Add 2 teaspoon oil in it and mix it well. Mix the oil with rice gently.
Cover and cook for 1 whistle only. Switch off the flame. Let the pressure of the pressure cooker settle down on its own.
Open the lid of the pressure cooker and keep it uncovered for 5 minutes. Fluff it up with a fork.
Garnish vegetable pulao with coriander leaves. Serve it with raita or salad.

1. Use the whole spices that are easily available with you. If you do not have the whole spices then use garam masala powder in vegetable pulao recipe. Increase the quantity of garam masala powder mentioned in the ingredients i.e. ½ teaspoon to 1 tsp. 2. You can use any vegetable of your choice like you can add sweet corn, cauliflower, mushroom and paneer(cottage cheese) while making vegetable pulao recipe. Do not use vegetables that become soggy after cooking.
