This fried rice is a combination of cooked rice and vegetables. Cooked rice is stir-fried with some vegetables and seasoned with spices and sauces. It can be made within 15 minutes with leftover rice.
It is a wholesome meal and tastes delicious too. Especially when you are short of time or are not in a mood to spend hours in the kitchen, then this is definitely a lifesaver recipe.
Which rice is best for fried rice?
Use medium to long grain rice to make fried rice. They are less starchy & do not turn out to be soggy or clump when cooked on high flame.
Short grain rice may turn out soggy or sticky. I prefer to use long grain basmati rice to make fried rice.
Use leftover rice or cold rice to make fried rice. Cold rice has less moisture & turn out to be crispy when tossed on high heat.
About this Indo-Chinese veg fried rice recipe:
This is not a Chinese veg fried rice recipe. I call it Indo-Chinese veg fried rice recipe. Chinese fried rice that is cooked in Indian style.
The quantity of spices used in the recipe differs from that in Chinese vegetable fried rice. Also, it suits more to Indian taste buds. Adjust the spices as per your taste 🙂 Procedure to make fried rice is more or less the same.
How to make veg fried rice
Preparations
- Wash and soak 1 cup basmati rice in water for at least 30 minutes.
- Boil 4 cups of water and add salt and 2 teaspoon oil in it. Once it comes to a boil add the drained rice.
- Cook the rice till it is just done and let it cool down completely.
- Spread it on a plate or baking tray. It will cool down faster.
4. Finely chop the vegetables - Spring onions, cabbage, capsicum, carrot, french beans, onions, ginger, garlic, and green chili.
5. Keep all the sauces, black pepper powder, and salt ready.
Making the fried rice
- Cook on a high flame to make any fried rice recipe.
- Heat 2 teaspoon of oil in a pan/wok. Add chopped ginger and garlic. Saute it for a minute.
- Now to this, add spring onions whites and green chili. Saute for 2 minutes.
- Put all the chopped vegetables.
5. Sprinkle salt and black pepper powder.
6. Cook till vegetables are half done. They should not be completely cooked. The vegetables should have a crunch in them.
7. Next, add the cooked rice. Over the rice add chili garlic sauce, soya sauce, and vinegar.
8. Fry it for 2 minutes. Finally, add some spring onion greens and mix.
9. Switch off the flame. Veg fried rice is ready.
10. Serve hot and Enjoy!

- Cook on a high flame for making veg fried rice.
- Keep all the ingredients ready.
- For better taste use sesame oil. They give a nutty flavor to it.
- It is recommended to use leftover rice to make any fried rice. You can make a fresh batch of rice and let it cool down completely before using it to make the fried rice.
- Cook the rice until they are just done. Do not overcook the rice for making fried rice.
- Also, cook the vegetables in such a way that it does not lose its crunch. Do not overcook the vegetables for making fried rice.
- If you find it difficult to toss while making fried rice then sprinkle some water and then toss it.
