This homemade chicken fried rice tastes the same as served in Chinese restaurants. All you need is some leftover rice, chicken, soy sauce, eggs & vegetables. Toss it together for a quick dinner made within 30 minutes.
This Chicken fried rice is one such dish that can be made easily & quickly. It is not at all spicy. But the flavors of chicken, eggs & vegetables get nicely combined with rice & it tastes awesome.
How to make Chicken Fried Rice
Preparations:
- Chop the onions, vegetables, spring onion greens & keep it aside.
- Keep all the spices & sauces ready.
Making the chicken fried rice
- Take chicken pieces in a mixing bowl. Add salt, black pepper powder, soya sauce, vinegar, egg & cornflour to it. Combine everything well.
- Heat ¼ cup of oil in a large skillet over medium heat. Fry the chicken pieces about 2 minutes each side. Remove it on a plate & keep it aside.
- Remove excess oil from the skillet. Keep about 1-2 teaspoon of oil. Pour the prepared egg mixture over it. Make scrambled eggs. Remove & keep it aside.
- In the same pan add 1 tablespoon of oil over high heat. Add spring onion whites & sauté for a minute.
- Add ginger-garlic paste & cook for 2 minutes.
- Next, to it add carrots, capsicum & cabbage. Stir fry the vegetables for 2-3 minutes. Vegetables should have crunch in them.
- Add the fried chicken & scrambled eggs to it.
- Stir to combine everything well.
- Stir in salt & black pepper powder.
- Add cold rice, soya sauce, chili garlic sauce & vinegar. Stir fry it for 3-4 minutes.
- Finally, add some spring onion greens, stir well & remove from heat.
Cooking Tips
- Cut the chicken pieces in thin strips. This ensures the chicken will cook fast.
- Do not over fry the chicken pieces. The oil should be medium hot to fry it. Just fry it for 2 minutes on each side & take it out. If you over fry the chicken it will turn hard or rubbery.
- Finely chop the vegetables that you are adding to make the fried rice.
- You can add green peas. If you are using fresh peas then cook it in boiling water & then add it with the chopped vegetables.
- Use cold rice or leftover rice for making fried rice. Never use freshly cooked rice for making the chicken fried rice. It may turn out soggy while stir-frying the rice.
- When you stir fry the vegetables, make sure you do not overcook them. They should have a crunch in them.
- Stir fry the rice over high heat for a good 3-4 minutes. It will make sure the rice grains are nice & hot & have the toasty flavor.
- Cook it in sesame oil for the best Chinese chicken fried rice flavor.
- If you do not have chili garlic sauce then add normal chili sauce.

Ingredients
To fry the chicken pieces
- 1 cup chicken pieces (cut chicken breast into strips)
- ¼ cup oil
- salt to taste
- 1 teaspoon black pepper powder
- ½ teaspoon soya sauce (soy sauce)
- 1 teaspoon vinegar
- 1 egg beaten
- ¼ cup cornflour
To make scrambled eggs
- 2 eggs
- salt to taste

To make chicken fried rice
- ½ cup spring onion whites
- 1 teaspoon ginger garlic paste
- ¼ cup finely chopped carrots
- ¼ cup finely chopped capsicum
- ¼ cup finely chopped cabbage
- salt to taste
- 1 teaspoon black pepper powder
- 2 cups white rice leftover
- 1 teaspoon soy sauce
- 1 teaspoon chili garlic sauce optional
- ½ teaspoon vinegar
- spring onion greens
Instructions
