I have already shared the potato nuggets recipe in my previous posts. Everyone at home loved it and then, I decided to make veg nuggets next. These veg nuggets are so delicious that you cannot stop at having just one 🙂

In this veg nuggets recipe:

  1. I have added garam masala and aamchur powder to give veg nuggets, the Indian touch.
  2. Also, I have used potatoes, capsicum, green peas and sweet corns in the recipe but you can add other veggies too like carrots, mushrooms etc. for making the veg nuggets.
  3. The magical taste comes from cheese and mixed herbs so do not skip it.
  4. Coating with breadcrumbs in important. It gives a crispy exterior to the veg nuggets. You can easily make breadcrumbs at home.

Ingredients

  • 2 potatoes medium size, boiled and grated
  • 1/2 cup capsicum finely chopped
  • 1/4 cup green peas boiled
  • 1/4 cup sweet corns boiled
  • 1/2 cup cheddar cheese
  • 1/2 tsp mixed herbs
  • 1 tsp Kashmiri red chili powder
  • 1/4 tsp garam masala powder
  • 1/2 tsp Aamchur powder/dry mango powder
  • 1/4 cup breadcrumbs
  • Salt to taste

To make corn flour batter:

  • 1/4 cup corn flour
  • 1/4 cup water
  • Salt to taste

Other ingredients for making veg nuggets:

  • 1/2 cup bread crumbs for coating
  • oil to fry

Instructions

Preparations to be done for making the veg nuggets

  • Boil potatoes, peel and grate it.
  • Cook peas and sweet corns.
  • Chop capsicum and keep it aside.

To make veg nuggets

  • In a mixing bowl, take boiled and grated potatoes, chopped capsicum, boiled green peas, boiled sweet corns, grated cheddar cheese, ginger garlic paste, mixed herbs, Kashmiri red chili powder, garam masala powder, Aamchur powder/dry mango powder, bread crumbs and salt.
  • Mix it well. Mash it while mixing it. If you feel there is more moisture in the mixture then add more breadcrumbs.
  • To shape the veg nuggets, take a small portion of the dough. Make a cylindrical shape out of it. Same way shape all the veg nuggets.
  • Prepare corn flour batter. In a bowl, take corn flour, salt, and water. Mix it well. The batter should be of free-flowing consistency.
  • Take the nugget, dip it in corn flour batter and coat it with the breadcrumbs. Same way makes the veg nuggets.
  • Heat oil. Fry the prepared veg nuggets in hot oil.
  • Take it out and drain the excess oil on a kitchen tissue.
  • Serve veg nuggets hot with tomato sauce.

Notes:
1. While making the dough add more breadcrumbs, if necessary.
2. You can freeze this veg nugget and fry it later. Thaw it out for 30 minutes and then fry it.
3. Fry nuggets in hot oil.
4. Do not overcrowd the oil while frying.
5. After putting the nuggets in hot oil, do not flip it immediately. Otherwise, it will break in oil.
6. You can replace cheddar cheese with either mozzarella cheese or any other processed cheese.

First of all, we will do some preparations for making the veg nuggets.

  1. Boil potatoes, peel and grate it.
  2. Cook peas and sweet corns.
  3. Chop capsicum and keep it aside.

Now we will start making the veg nuggets.

4. Prepare a cornflour batter. In a bowl, take corn flour, salt, and water. Mix it well. The batter should be of free-flowing consistency.

5. Take the nugget, dip it in corn flour batter and coat it with the breadcrumbs. Same way, prepare all the veg nuggets.

6. Heat oil. Fry the prepared veg nuggets in hot oil. Take it out and drain the excess oil on a kitchen tissue.

7. Serve veg nuggets hot with tomato sauce.

My Tip:

        1. While making the dough, add more breadcrumbs, if necessary. If there is more moisture in the dough then veg nuggets will not hold its shape and will break in oil while deep frying it.
        2. You can freeze this veg nugget after coating it in the bread crumbs. Put them in zip lock bags and freeze it. While frying, take it out and let it come to room temperature. Then deep fry it.
        3. When frying the nuggets in oil:
      • Make sure the oil is hot. If it is not hot, nuggets will break in the oil. Also, it will soak the oil.
      • Do not overcrowd the oil. If you put too many nuggets at a time, to fry, it will reduce the temperature of the oil and the veg nuggets will not be crispy.
      • Do not try to flip veg nuggets immediately after putting nuggets in the oil. Let it fry on one side and then slowly flip to fry it on another side.
