Chicken Fajita Sandwiches made with chicken strips, and vegetables, spiced with homemade fajita seasoning, stuffed inside sandwich bread with lots of cheese. This chicken fajita grilled cheese sandwich is loaded with Mexican flavors. You can make it within 30-minutes.

For Fajita Veggies
1onion, sliced
1red bell pepper, sliced

8sandwich bread slices or use burger buns
processed cheese slice or use any favorite cheese(Cheddar or Monterey Jack Cheese.)

Prepare the Fajita Seasoning: In a small bowl, combine all the ingredients mentioned under fajita seasoning. Remove 1 teaspoon seasoning from it and set it aside. We will use that later.
Marinate the Chicken: Slice the chicken breast in half. You will get 4 slices from 2 chicken breasts. Set it aside. In a big bowl, combine the rest of the fajita seasoning, oil, and lemon juice. Marinate the chicken breast with it for at least 4 hours. Cover and keep it in the refrigerator.
Making the Chicken Fajita Sandwich
Cook the chicken: Heat 2 teaspoon of oil in a pan over medium-high heat. When the pan is hot, place the chicken breasts on it. Fry until char marks appear on both sides. Remove it on a plate. Let it cool down for 10 minutes. Slice the chicken breasts into thin strips. Scrape off the burnt bits or you can wipe them with a kitchen tissue.
Cook the Fajita Vegetables: To the same pan, add 1 teaspoon oil. Add onions and bell pepper. Stir-fry for 2 minutes. Add the reserved fajita seasoning. Cook it for 1 more minute or until vegetables are soft. Add 2 tablespoon tomato sauce (optional). Add it as it gives some moisture to the veggies. Combine. Remove from heat.
To assemble the sandwich: Place a sandwich bread slice. Top it with the cheese (processed cheese slice and mozzarella cheese), fajita vegetables, and chicken. Cover it with another bread slice. Apply butter on the top slice. Place the butter side of the sandwich in a heated pan. Cook on low heat for a minute or until crisp and golden. Apply butter on the other side of the sandwich. Flip it. Cook for a minute and remove. Chicken Fajita Sandwich is ready to serve. Serve hot with tomato sauce

Slice the chicken breast in half. This helps the chicken breast to cook evenly.
Marinate the chicken for 4 hours or overnight. Marinating the chicken for longer hours makes it soft and juicy. This will also increase the flavor of the chicken. However, if short of time, you can marinate for 1 hour.
To marinate, transfer the chicken to an airtight container, and keep it in the refrigerator.
Grill the chicken on high heat - The pan should be very hot. When you put the marinated chicken on it, you should hear a sizzling sound. This will seal the outer surface of the chicken & lock the moisture inside. It will result in the best juicy and moist chicken that is crispy outside.
Cook the chicken - Make sure to cook the chicken until it is cooked through. You can make a small cut in the middle to check that it is no longer pink in the middle. It should be white or opaque in the middle.
Cook the chicken until char marks appear on it. It will give a nice smoky flavor to the chicken.
Give at least 10 minutes of resting time to the chicken, once it is cooked. Then slice it.
Pan-fry the vegetable separately. Make sure the vegetables are charred but not overcooked.
Tomato sauce is not a part of the chicken fajita. The addition of tomato sauce to veggies makes them soft and moist. I love to add them to make sandwiches.
Adjust the quantity of fajita seasoning as per your taste.
