Ingredients

1CupRiceuncooked
¼CupCarrotfinely chopped
¼CupCapsicumfinely chopped
¼CupSpring Onions Greensfinely chopped
¼CupSpring Onion whitesfinely chopped
¼CupChopped French Beansfinely chopped
1Onionfinely chopped
2teaspoonGarlicfinely chopped
2teaspoonGingerfinely chopped
2Green Chiliesfinely chopped
2teaspoonSoya Sauce
1teaspoonRed Chilli Sauce
1.5teaspoonVinegar
1teaspoonBlack Pepper Powder

Instructions
Preparations for making egg fried rice recipe
Cooking rice
Wash rice & soak it in water for at least 30 minutes.
In a vessel boil 5 cups of water. Add salt and oil to it.
Once the water comes to a boil, add rice.
Cook it 90% only. When you press the rice grain with your finger it should have a bite in it.
Drain it to a colander. Spread it on a plate to cool down.
Chop the vegetables
Finely chop the carrot, capsicum, green chilies, ginger, garlic, onions, spring onions, and french beans. Keep it aside.
Also, keep all the sauces and spices handy.
Prepare scrambled eggs
Beat two eggs with a fork. Add salt and black pepper powder and set it aside.
Heat the oil in a frying pan. Pour the prepared egg mixture and scramble them.
Remove it on a plate and keep it aside.
Making egg fried rice
Now on a high flame, heat the same pan & add 2 teaspoon oil.
Add onion, spring onion white, ginger, garlic, and green chilies and fry it for a minute.
To this add carrot, capsicum, and french beans. Add salt and cook it for 2-3 minutes, stirring continuously.
Do not overcook the vegetables.
Add in the scrambled eggs and rice to it.
On the top of the rice add red chili sauce, soya sauce, black pepper powder, and vinegar. Mix it gently or toss it for 2 minutes.
Garnish it with spring onion greens. Egg fried rice is ready. Serve hot and enjoy!

Notes
Make fried rice only on high flame.
Keep all the ingredients handy as you have to cook fast on a high flame.
Be careful while adding salt to the recipe as the sauces already have salt in it.
