Preparations to be done for making the veg nuggets
Boil potatoes, peel and grate it.
Cook peas and sweet corns.
Chop capsicum and keep it aside.
To make veg nuggets
In a mixing bowl, take boiled and grated potatoes, chopped capsicum, boiled green peas, boiled sweet corns, grated cheddar cheese, ginger garlic paste, mixed herbs, Kashmiri red chili powder, garam masala powder, Aamchur powder/dry mango powder, bread crumbs and salt.
Mix it well. Mash it while mixing it. If you feel there is more moisture in the mixture then add more breadcrumbs.
To shape the veg nuggets, take a small portion of the dough. Make a cylindrical shape out of it. Same way shape all the veg nuggets.
Prepare corn flour batter. In a bowl, take corn flour, salt, and water. Mix it well. The batter should be of free-flowing consistency.
Take the nugget, dip it in corn flour batter and coat it with the breadcrumbs. Same way maksthe other veg nuggets.
Heat oil. Fry the prepared veg nuggets in hot oil.
Take it out and drain the excess oil on a kitchen tissue.
Serve veg nuggets hot with tomato sauce.

1. While making the dough add more breadcrumbs, if necessary. 2. You can freeze this veg nugget and fry it later. Thaw it out for 30 minutes and then fry it. 3. Fry nuggets in hot oil. 4. Do not overcrowd the oil while frying. 5. After putting the nuggets in hot oil, do not flip them immediately. Otherwise, it will break in oil. 6. You can replace cheddar cheese with either mozzarella cheese or any other processed cheese.
