3cobs fresh corn, (husk and the silk removed)
½cupfinely chopped onions
½cupchopped plum tomatoes
½cupchopped red bell pepper

For the dressing
3tablespoonlemon juice
3tablespoonextra-virgin olive oil
salt to taste

Heat a grill pan or cast iron skillet over medium heat on the stove top. Lightly grease it with oil. Cook the corn turning occasionally for 8-10 minutes until char marks appear on them. Remove and set it aside for 5 minutes to cool down.
With the help of a sharp knife cut the corn kernels off the cob. Keep it aside.
Making the grilled corn salad
Combine all the salad ingredients in a mixing bowl.
In a medium size bowl, combine the salad dressing ingredients. Whisk it well.
Add the prepared dressing to the salad bowl and combine it well. Taste & adjust the seasoning. Add more salt, lemon juice & pepper as per taste.
Keep it in the refrigerator for 30 minutes to an hour to let the flavors blend together. It tastes best when served chilled.
