To make Asian Salad Dressing:
3tablespoonolive oil
2tablespoonrice wine vinegar
1.5tablespoonlight soy sauce
½teaspoonfresh ginger paste or grate it
1teaspoongarlicfinely chopped
1teaspoonblack peppercrushed
1tablespoonhoney
1tablespoonchili garlic sauce
To make the Chinese Chicken Salad
3cupsChinese Nappa cabbagefinely shredded
1.5cupspurple cabbagefinely shredded
1cupcarrotfinely julienned
1.5cupschickenshredded cooked chicken
¼cupshallotsfinely chopped
1cupfried noodles
¼cupcilantrofinely chopped
1tablespoonroasted sesame seeds
Instructions
How to make Chinese Chicken Salad
In a small mixing bowl, whisk together olive oil, rice wine vinegar, light soy sauce, ginger, garlic, black pepper, honey, and chili garlic sauce. Set it aside.
In a large mixing bowl, add the cabbage, carrots, chicken, shallots, ½ of the fried noodles, and cilantro to the bowl.
Give a quick mix to the dressing and add it to the salad. Toss all the ingredients together.
Taste & adjust the seasoning.
Add the rest of the fried noodles and roasted sesame seeds. Toss it & serve.

You can buy store-bought fried noodles. I have made mine at home. Boil enough water in a pot and add salt & noodles to it. Cook the noodles as per the instructions given on the package. Drain it and rinse with cold water. Set it aside for 5 minutes. Sprinkle some cornflour & toss it with the noodles. Deep fry the noodles in medium hot oil. Fried noodles are ready.
To make shredded chicken - Boil water in a large pot. Add 1 bay leaf, ½ inch cinnamon, 10-12 black peppercorns, salt & boneless chicken breast. Cook it for 15 minutes on high heat. Remove the chicken. With the help of two forks shred the chicken while it is still warm.
You can shred the chicken in advance. Store it in an airtight container in the freezer. Stays good for 2 weeks.
You can store the fried noodles in an airtight container at room temperature. It stays good for 5 days.
Thinly slice the cabbage & carrots.
You can cut all the veggies for meal prep and store them in an airtight container in the refrigerator. Do not add the dressing. It stays good for a week. Whenever needed just make the Asian salad dressing and toss it with the veggies.
Do not store the leftovers. The veggies and the fried noodles will not stay crisp and don’t taste good.
