Ingredients
To make the sauce
2teaspoonvegetarian oyster sauce or use dark soy sauce
1teaspoonlight soy sauce
1teaspoonsesame oilor olive oil
1teaspoonvinegar
1teaspoonsriracha add more if you prefer spicy
1teaspoontomato sauce(optional)
½teaspoonblack pepper powder
salt to taste

¼cupwater/vegetable broth
To cook noodles
6cupswater
salt to taste
160-gramuncooked noodlesuse spaghetti or egg noodles
To make Lo Mein
2teaspoonoil
¼cupsliced spring onion whites
½teaspoongingergrated
1teaspoonfinely chopped garlic
½cupchopped button mushroom
half red bell peppersliced
1carrotcut into strips
half green bell peppersliced
¼cupcabbageshredded
2tablespoonspring onion greens
Instructions
Preparations
Cook the noodles as per the instructions given on the package. Drain it on a colander. Add 2 teaspoon oil & toss the noodles. Set it aside.
To make the sauce
Combine all the ingredients mentioned under the Lo Mein sauce. Set it aside.
To make Lo Mein
Heat 1 teaspoon oil over medium-high heat in a heavy bottom pan.
Add spring onion whites, ginger paste, garlic, and button mushrooms. Saute for 3-4 minutes.
Add red bell pepper, carrot, green bell pepper, and cabbage. Stir and cook until vegetables are soft but still retain crunch in them.
Add the cooked noodles & the prepared sauce.
Combine everything well. Make sure noodles are coated well with the sauce.
Garnish with spring onion greens. Remove from heat.
Serve it hot and enjoy!

Cook the noodles until al dente - Cook it as per the instructions given on the package. Overcooked noodles will not taste good.
Keep all the vegetables, spices & sauces handy - We are going to stir-fry everything on high heat. So keep all the ingredients nearby before you are starting to cook the noodles.
Stir-frying the vegetables - Cook vegetables in such a way that they are cooked but still retain the crunch in them. Overcooked vegetables become soggy & spoil the entire dish.
You can cut the vegetables in advance. Store it in an air-tight container in the refrigerator. It saves the chopping time & just takes 15 minutes to cook noodles, stir-fry the chopped veggies and toss everything together with the sauce.
Sesame oil gives a beautiful nutty aroma to the dish.
