Ingredients
To make marinara sauce
1kgtomatoesOr use 1 large can (28 ounces) of whole peeled tomatoes.
3tablespoonextra virgin olive oil
¼cupfinely chopped onionor 1 small onion, chopped
6clovesgarlicfinely chopped
1teaspoondried oregano
½teaspoonred pepper flakesoptional
1teaspoonfinely chopped fresh basil
salt to taste
1teaspoonground black pepper
2teaspoonsugarcheck notes or use a small carrot
To cook spaghetti
150gramwhole wheat noodles
To make Spaghetti marinara
1teaspoongarlic, finely chopped
1red onion, sliced
1carrot,sliced
1Yellow capsicum,sliced
1red capsicum,sliced
1green capsicum,sliced
½cupcabbage,shredded
salt to taste
½cupMarinara sauce(add as required)
½teaspoonblack pepper powder
2teaspoonsoy sauce
2tablespoonspring onion greens
Instructions
To make the marinara sauce
Wash & clean the tomatoes. Make a cut (cross shape) at the bottom of each tomato. Set it aside.
Heat 3 cups of water in a pan over high heat. When the water begins to boil, add the tomatoes.
Cover & cook for 5 minutes. Remove & drain it to a colander.
Immediately put the tomatoes in cold water. Peel off the skin & roughly chop the tomatoes (discard seeds).
Reserve a few chopped tomatoes aside & puree the rest of the chopped tomatoes. Set it aside. If you are using canned tomatoes then you can skip the steps from 1-5.
Heat a heavy bottom pan over medium heat & add olive oil.
Add onion & sauté until it is translucent.
Next, add garlic cloves and sauté it for 2 minutes.
Add the pureed tomatoes & chopped tomatoes. Combine it well. Let it come to a boil.
Now add salt, black pepper powder, dried oregano, red pepper flakes, and sugar. Mix it well.
Simmer the heat & cook for 20 minutes.
To cook spaghetti
While the sauce is simmering, heat water in a pan. Add salt & stir.
Cook the spaghetti as per the instructions given on the package.
Drain & immediately rinse it with cold water & set it aside.
To make spaghetti Marinara
Heat 2 teaspoons of oil on high heat.
Next, add garlic & sauté for a minute.
Add sliced onions and sauté until onions are translucent.
Add carrot, bell peppers, and cabbage. Stir-fry for 3-4 minutes. Make sure they retain the crunch.
Finally add spring onion greens, mix and remove from heat.
Spaghetti marinara is ready to serve.

Notes
Use fresh, ripe & juicy tomatoes to make marinara sauce. I have used fresh tomatoes.
You can also use canned tomatoes. Use 1 large can or 28 ounces of whole peeled tomatoes. If you are using canned tomatoes then make sure they do not have other flavors added to them.
Cook the spaghetti until al dente - Cook it as per the instructions given on the package. Mushy or overcooked spaghetti will not taste good.
Rinse spaghetti with cold water - It will stop the cooking process of spaghetti immediately. Also, the excess starch is rinsed with the water that makes the pasta sticky.
Make the marinara sauce ahead - Make the marinara sauce ahead of time, let it cool down completely & store it in an airtight container in the refrigerator. It will reduce the cooking time. Whenever needed just heat the sauce, add cooked spaghetti & stir-fried veggies. Toss it well. Spaghetti marinara is ready within 20 minutes.
