Crispy corn fritters | How to make corn fritters | Vegan corn fritters
Corn fritters are fried savory pancakes made with corn kernels, onions, flour, & milk. They can be served as a snack and or as an appetizer. They’re easy to make, customizable with your favorite vegetables & seasonings. You can make them ahead of time if you have a busy week ahead.

Ingredients
1 ½ cupfresh corn kernelsblanched in boiling water for 5 minutes. Drain it & pat dry with clean kitchen towel. Use ½ cup to make a ground paste.
½cuponionsfinely chopped
1teaspoonfinely chopped garlic
½teaspoongrated ginger
2tablespoonchopped cilantro or coriander leaves
½teaspoonbaking powder
1teaspoonlemon juice
¼cupall-purpose flour
½teaspoonred chili powderor use red pepper flakes
½teaspoonroasted cumin powder
1teaspoonblack pepper powder
salt to taste
¼cupcoconut milk(any non-dairy milk for vegan version)
oil to fry
Instructions
Make the ground corn paste - Grind the corn kernels without adding water. Set it aside.
Mix the dry ingredients - In a large bowl, add corn kernels, onion, ground corn kernels, ginger, garlic, cilantro, baking powder, lemon juice, all-purpose flour, red chili powder, cumin powder, black pepper powder & salt. Combine all the ingredients well.
Make the corn fritter batter - Add milk & stir to make the batter. Do not over mix the batter. Set it aside.
Pan Fry the fritters - Heat a heavy-bottomed pan over medium heat. Add 2 tablespoons of oil to coat the base of the pan. When the pan is hot, pour the batter with a spoon. Press the batter gently with the back of the spoon to flatten it. You can also use a cookie scoop to scoop out the batter.
Let the fritters fry on one side for 2-3 minutes. Do not try to flip it immediately after pouring the batter. Wait for 2 minutes after pouring the batter, check at the base of one fritter by gently lifting it. Flip it & fry on the other side until golden & crisp. Serve hot with tomato sauce or any dip.

If using frozen corn, make sure to thaw it first & drain off the excess liquid.
If using canned corn, drain it & pat it dry.
Make the batter thick. If you add more milk than required then the fritters will be soggy.
