Equipment
Tawa (griddle) or Frying pan
Ingredients
6bread slices
butter, softened (as required)
To make the paneer sandwich filling
½cuppaneer,grated or crumbled
¼cupgrated carrot
¼cupgrated cabbage
2tablespoonchopped capsicum
2tablespoonchopped coriander leaves
1teaspoonfinely grated ginger
½teaspoonblack pepper powder
salt to taste
1tablespoonchili garlic sauce (optional)
1tablespoontomato ketchup
Instructions
Preparations
Grate paneer, carrot, cabbage & capsicum. Keep it aside.
Finely chop coriander leaves & ginger. Keep it aside.
Making the paneer stuffing mixture:
In a mixing bowl, add paneer (cottage cheese), carrot, cabbage, capsicum, coriander leaves & ginger.
Add black pepper powder, salt, chili garlic sauce & tomato ketchup. Mix it well. Keep it aside.
Making the tawa paneer sandwich
Heat a tawa/pan over low flame.
Take two bread slices & apply butter evenly on it.
Put the stuffing on one of the bread slice.
Apply green chutney on the other slice.
Now place this slice with green chutney over the first slice.
Sandwich is ready to fry.
Apply butter on the top of the sandwich.
Toasting the paneer sandwich on Tawa/pan
Place the butter side of the sandwich facing the pan.
Lower the flame & toast it for a minute approx.
Gently press it while toasting. It will keep the sandwich intact.
Now apply butter on the top of the sandwich.
Flip it & fry on the other side until golden.
Take it out. Slice it.
Serve hot & enjoy!

Notes
Use fresh paneer as it is soft & moist.
You can use brown bread or multi-grain bread to make it more healthy.
You can store the leftover sandwich filling in an airtight container in a refrigerator. Use it within 24 hours.
You can use the filling to make paneer paratha roll.
Serve immediately. It might turn soggy after a while.
You can substitute green chutney with tomato sauce.
To prepare green chutney:
Ingredients: 1 cup coriander leaves, ¼ cup roasted putana/chana/puffed chickpeas, 2 green chilies (roasted), 1 tablespoon lemon juice & salt to taste.
Method: Place all the ingredients in a mixer jar. Add little water & grind it to a fine paste.
Storage suggestions:You can prepare & store green chutney in an airtight container in the refrigerator. Stays good for a week. You can freeze this green chutney. Stays good for a month.
