Ingredients
For Sponge Cake:
1cupall purpose flour/Maida -
¾cupcurd - (¾ cup + 1 tbsp)Use Curd at room temperature
¾cupsugar
½teaspoonbaking powder
1 teaspoonbaking soda
¼cupcooking oil
1teaspoonvanilla essence
For Sugar Syrup:
2tablespoonsugar
¼cupwater
1teaspoonvanilla essence
For the Icing:
700mlnon-dairy whipping cream
1teaspoonvanilla essence
Other ingredients:
Edible Silver Beads for decorating the dress
Pink Food color.
Inox number 14 tip used to create ruffles.

Instructions
Prepare a basic vanilla sponge cake
In my last post, I have shared the recipe for eggless vanilla sponge cake. For this doll cake, I baked 4 sponge cake. Depending on the height of the doll, decide on how much sponge cake you require to prepare for making the dress of the doll.
Making the whipped cream icing
In a mixing bowl take chilled whipping cream. Whip the cream until it reaches stiff peaks.
The cream will be almost double in quantity. It takes around 3 to 5 minutes.
You can add vanilla essence now. Mix it well.
Assembling the dress of the Doll cake
Cut a small circle in the middle of the sponge cake with a cookie cutter.
Put some icing on the cake board. Now place the first sponge cake over it.
Pour some sugar syrup on it. Apply some icing over it.
Place second sponge cake over it. Repeat the same process for the second and third sponge cake.
Place the fourth sponge cake and pour sugar syrup on it.
Shaping the dress of Doll cake
Hold the knife at an angle of 45 degrees. Leave about one-inch space from the outer border of the circle and start cutting a circle. Start with shaping the top sponge cake only.
Next start shaping the dress of the Barbie Doll
Using a serrated knife, carve the cake to a dome shape.
Using a brush remove the crumbs sticking to the cake and the cake board. Crumb coat the cake.
Apply a layer of icing with a Palate knife all over the cake. It will seal the crumbs from falling off.
To hold the shape insert plastic straw. First, measure the height and cut the straw accordingly.
I used 3 straws here. Keep it in the refrigerator to set for around 30 minutes to an hour
Decorating the dress of Doll cake
For the skirt part, I am using white and pink color.
For making Pink color icing -Take about 4-5 tablespoon of whipped cream in a bowl. Add Pink food color to it. Mix it. Put this icing in the Icing bag. Keep it in the refrigerator.
Tie up the hair of the doll. Wrap the lower part of the Barbie with a cling wrap. It will protect the doll from icing.
Insert the doll from the top of the cake. Apply some icing around her waist.
Mark the design of the dress. Pipe ruffles.
Take the white color icing and start creating ruffles inside the marked area.
Now make pink color ruffles in the remaining area of the skirt.
Make white dots for the bodice part of the dress.
Decorate the dress with edible silver pearls.
Barbie doll cake is ready.
I placed a small cupcake for the candle.

For making sugar syrup - In a pan add sugar and water. Bring it to a boil. Stir constantly. Turn off the heat. Cover with a lid and let it cool down. Once cooled add Vanilla Essence.
It took one hour to bake the sponge cake for the doll cake. It is good to bake the cake a day earlier and then refrigerate it, as the cake will be firm and you can easily shape the dress of the doll.
I have initially inserted skewers to hold the sponge cake in its place. Better to use plastic straws. It holds the cake properly in its place.
