Shredded chicken sandwich with step-by-step photos and a video recipe. This chicken sandwich is made with creamy and cheesy shredded chicken filling made with mayonnaise, and cheese. If you have shredded chicken on hand then you can make it within 10 minutes.Grill it or serve it as a cold chicken sandwich. Kids are definitely going to love them.
In a deep bottom pan, boil 6 cups of water over medium heat.
Add 1 teaspoon crushed black pepper, salt to taste, 1 chicken stock cube, 3 garlic cloves roughly crushed, a small piece of ginger crushed, 1 bay leaf, and chicken breast.
Cook it for 20 minutes. Remove from heat.
Remove the chicken breast with the help of tongs to a plate. Let it cool down a little.
Do not discard water used to cook the chicken breast. It has all the flavors. Use it for making soups or curry.
With the help of a fork, shred it while it is still warm. Shredded chicken is ready.
Making the shredded chicken sandwich filling
In a mixing bowl, combine shredded chicken with mayonnaise, tomato sauce, salt, bell peppers, onions, Italian seasoning, black pepper powder, red pepper flakes, and cilantro.
Taste and adjust the seasoning.
Assembling the sandwich
Apply butter to a bread slice. It acts as a protective barrier, preventing the sauce from the chicken filling from saturating the bread.
Spread the prepared sandwich filling evenly on it.
Next, add a layer of grated cheddar and mozzarella cheese on top.
Cover it with another bread slice. You can serve it as cold chicken sandwich. Refirgerate for atleast an hour and serve it chilled. Tastes best when served chilled.
To grill the sandwich
Apply butter on top of the prepared sandwich.
Heat a grill pan on the stovetop over medium heat.
Place the sandwich over the pan (the buttered side facing towards the pan). Apply butter on top. Let it cook for a minute.
Flip it and cook on another side until crisp.
Remove it to a plate.
Slice it diagonal, or into rectangles and serve this shredded chicken sandwich with your favorite dip.

Toasting the sandwich adds a little crunch to the sandwich. If you like cold chicken sandwiches then serve them without toasting them.
If serving it as a cold chicken sandwich remove the crust off the sandwiches. My kids don't like the crust so I remove it before serving the sandwiches.
While making the shredded chicken sandwich filling, make sure there is enough moisture in the filling. It should not be dry. If required, add more mayonnaise, to keep the filling nice and moist.
Be careful while adding salt, mayonnaise has salt in it. It is better to taste the sandwich filling and then add salt as required.
For meal prep - Chop the bell pepper in advance and keep them in an airtight container. Stays good for 5 days. Cook chicken, shred it, and let it cool down completely. Store it in a separate airtight container. You can freeze it. It stays good for a month.
Assemble the sandwiches just before serving.
Consume the sandwich within 2 hours of preparing it.
