Ingredients to make Sandwich chutney
1cupcoriander leaves
¼cuproasted putana/bhuna chana/roasted gram
2green chiliesroasted
1tablespoonlemon juice
salt to taste
Ingredients to make the potato filling for the sandwiches
4potatoesboiled and peeled
1small onionfinely chopped
1green chili finely chopped
½teaspoongingerfinely chopped
3tablespooncoriander leavesfinely chopped
½teaspoonred chili powder
½teaspooncumin powder
½teaspoonaamchur powder/dry mango powderchaat masala
½teaspoongaram masala powder
salt to taste
Other ingredients:
8Bread slices
Butter as required
2-3tablespoontomato ketchup

Preparations to be done:
Making the green chutney for the sandwich:
In a mixer/grinder jar take coriander leaves, roasted putana/bhuna chana/roasted gram, roasted green chilies, lemon juice & salt.
Grind it to a fine paste. Green chutney for the sandwich is ready
Making the spicy potato filling for the sandwiches:
In a mixing bowl take boiled potatoes, finely chopped onion, finely chopped green chili, finely chopped ginger, chopped coriander leaves, red chili powder, cumin powder, aamchur powder/dry mango powder/chaat masala, garam masala powder & salt.
Mash the potatoes and combine everything. Taste it and adjust the salt or spices.
Making the aloo sandwich/potato sandwich
Spread green chutney on one slice. Keep it aside.
Apply tomato sauce on the other slice.
Spread the potato filling over it.
Cover with the first bread slice. Press it gently.
Apply butter on both sides.
Toast them on a heated pan. Slightly press it while toasting.
Serve aloo sandwich with green chutney (dip or tomato ketchup.

Notes
Press the aloo sandwich slightly while toasting it on the tawa/frying pan. It helps the potato filling to stick to the bread slices.
You can add chaat masala to the potato filling.
If adding chaat masala then skip adding aamchur/dry mango powder to the recipe.
